Choco-Espresso Ice Pop

Full coffee flavour with a rice dark chocolate body. Delicious and decadent. Using ice to flash-freeze the espresso flavours adds a lovely depth of flavour to this ice pop. And if you don't have access to an espresso machine, just brew some strong coffee in a french press. 

 

Ingredients

  • 50ml FiXX espresso (approx double shot, and any blend will work)
  • 100g ice
  • 50g dark chocolate sauce. 
  • 5ml simple syrup (sugar dissolved in water 1:1)
  • Dark chocolate chips

 

Method 

  1. Put 100g of ice in a jug and add 5ml of simple syrup.
  2. In a separate jug, add the chocolate sauce and brew your coffee straight on top of it.
  3. Mix to combine the espresso and chocolate sauce, then pour the mixture over the ice and flash-chilling it.
  4. Pour the liquid into your ice pop moulds, leaving a little space at the top for the stick and chocolate chips.
  5. Put in the freezer for 30 min, then take out and add the chips to the mixture.
  6. Put your stick in place, then return to the freezer until fully frozen.
  7. For easy removal from the moulds, pour some hot water on the outside before removing.
